Almond flour is simply ground almonds. The use of this type of flour has increased due in part to the healthy eating trend and also because it is gluten-free. Flour made from ground, blanched almonds has a different texture than regular baking flour.
There are numerous recipes for almond flour cookies. There are recipes for chocolate cookies, shortbread cookies, and many other types of cookies you can make using this type of flour. One of the simplest almond flour cookies recipe is one that only takes five ingredients. You mix 2 cups of almond flour, 1/2 tsp. baking powder, 1/4 cup butter, 3 Tbsp. maple syrup and 1/2 cup chocolate chips together then form the dough into balls. Put balls on a cookie sheet, press down to form a cookie, and bake at 350 degrees for 10 to 12 minutes.
Another easy cookie recipe is a three or four-ingredient keto cookie. The basic recipe requires 2 cups of flour made from blanched almonds, 6 Tbsp. of coconut oil, 1 egg, and Keto sweetener. Form balls, place on a baking sheet, flatten, and cook at 350 degrees for 7 to 10 minutes. The recipe becomes a four or more ingredient recipe when you add something such as lemon or lime zest, peppermint extract, toasted coconut, or chopped toasted almonds for additional flavor.
You can make almond flour biscuits that can be included in a keto diet plan. One basic recipe Keto Almond Flour Biscuits requires one large egg, 1/4 cup sour cream, 1/4 tsp. sea salt, 1 cup of almond flour, and 2 tsp. baking powder. Mix ingredients, put 6 mounds of dough on a baking sheet and bake at 350 degrees for 15 to 18 minutes.
For specialized diets or to lessen calories in general, you can prepare sugar-free almond cookies using flour you’ve made at home from blanched almonds or purchased already prepared.
