Easy Crispy Beet Chips Recipe

Beetroot chips are a healthy, flavorful, and crunchy alternative to potato chips. They contain protein, fiber, iron, calcium, and other nutrients that support overall health. The health benefits they provide are numerous and range from helping lower the risk of heart disease to improving stamina and providing antioxidants. Making a small investment in a kitchen tool called a mandolin will make preparing baked beet chips much faster and easier. The chips will turn out better when the slices are equal in thickness and the mandolin helps with that.
If making these chips is a new adventure for you, this recipe is a good one to start with. It only takes 2 beets that you have rinsed, scrubbed, peeled and thinly sliced. You’ll need to preheat the oven to 375 degrees. While oven is heating, drizzle olive oil on 1 or 2 baking sheets. Add a pinch of sea salt and a pinch of black pepper to the beet slices and toss to coat. Place the slices in a single layer on baking sheets. Place them in the oven for 15 minutes. If they require additional cooking time for crispness leave them another 5 minutes but monitor them carefully because they can burn quickly. Remove from oven and cool before eating or storing them.
You can add rosemary sprigs to any beet chip recipe for additional flavor. Dried beet chips are a fantastic chip all be themselves. However, if you want to serve them at a party, or on game night or family night, you can prepare a dip for the chips. French Onion dip, yogurt herb dip or spicy goat cheese dip are a few popular accompaniments to beetroot chips.
As a time-saving convenient way to keep a healthy snack on the pantry shelf, you can prepare a large batch of baked beet chips and store them in an airtight container. If the family doesn’t devour them, the beet chips will keep at least 4 weeks, possibly longer.
