How to Make Sun Dried Tomatoes?

The process of making dried tomatoes is relatively easy. Dried tomatoes will add a gourmet touch to whatever you use the tomatoes in. Sun dried tomatoes have a flavor combination of sweetness, saltiness, and a bit of tanginess. They are one of the most versatile ingredients to keep on hand. They can be a flavorful addition to homemade bread, pizzas, pesto, and many meat and vegetable dishes.
Roma tomatoes are considered one of the best types of tomatoes to dry. Cherry tomatoes also dry well. Regardless of what type of tomato you use, the sun-drying process is the same. However, the drying time can vary.
To make dried tomatoes using natural sunlight, you’ll need a screen to place them on and a frame to put the screen on so that air circulates all around the tomatoes. Slice the tomatoes in half and place them on the screen cut side down. Lightly sprinkle the tomatoes with salt. Cover the tomatoes with a cheesecloth but don’t allow the cloth to touch the tomatoes. Place the tomatoes in sunlight during the day and in a sheltered location at night or during wet weather. Turn the tomatoes after 1 to 2 days. The drying process can take 3-4 days, depending on the amount of sunshine you have during the drying process.
To dry approximately 7 pounds of Roma tomatoes in the oven, cut them in half and place them on a glass or porcelain baking tray with the cut side up. Sprinkle them with salt. Place the tray in a 200-degree oven. Leave the oven door slightly open. After three hours, turn the tomatoes and press them flat with a spatula. Continue drying them in the oven, turning and pressing them every few hours until they are dry.
To dry approximately 7 pounds of Roma tomatoes in a dehydrator, cut the tomatoes in half and place them on a dehydrator tray with the cut side up. Set the temperature at 140 degrees. When 4 to 5 hours have passed, turn the tomatoes over and gently flatten them with a spatula. A few hours later, repeat that process. Continue drying until the tomatoes are dry but still pliable.
