How to Roast Pumpkin Seeds?

Pepitas and pumpkin seeds are similar but not identical. Pepitas are only found in certain varieties of pumpkins. Unlike the seeds from a jack-o-lantern pumpkin, they do not have a shell. Roasted pumpmkin and pepita seeds are popular snack items. They are also a powerhouse of nutrition.
You can purchase roasted pepitas and pumpkin seeds to enjoy as a snack or recipe ingredient but, there’s one benefit those roasted items don’t have. If you buy raw seeds or scoop seeds from a pumpkin to roast, you will get the benefit of enjoying the amazing aroma that will fill your kitchen. Adding different spices to the seeds before roasting will further enhance the aromatic benefit.
Once you have cut a pumpkin open and removed the seeds, you’ll need to separate the seeds from the “guts” of the pumpkin. Place the seeds you’ve scooped out in a strainer and rinse thoroughly with cold water. Once the seeds are clean, place them on a towel and pat dry.
The preparation of the seeds is more time-consuming than the roasting process. Buying raw seeds ready for roasting is a big time-saver.
To roast one cup of pumpkin kernels, spread a single layer of seeds on an ungreased baking pan. Pour 2 tablespoons of melted butter or olive oil over the seeds and mix until coated. Sprinkle the seeds with salt and pepper. Bake 15 to 20 minutes. Cool before serving.
There is an almost endless number of seasoning mixes you can use when roasting pumpkin kernels. You can use herbs such as basil and oregano combined with garlic powder and grated Parmesan cheese for an Italian flavor. A mix of brown sugar, cinnamon, and a pinch of salt turns roasted pepitas into a sweet treat. If you want something hot and spicy you can sprinkle the pumpkin kernels with cayenne pepper or Cajun seasoning. A mix of cumin, chili powder, and cayenne provides considerable spiciness. You can also sprinkle premade seasonings such as taco seasoning or ranch seasoning over the seeds.
