The recipe requires 1 cup of brown sugar, 12 oz. of roasted, salted macadamia nuts, and 1/4 cup of egg whites. While your oven preheats to 350 degrees, mix the brown sugar and macadamia nuts in a bowl. Beat this mixture on low speed and slowly drizzle in the egg whites. Once all the egg whites are in the bowl increase the mixer speed to medium and mix for 4 to 5 minutes. Drop rounded tablespoons of the batter onto a greased baking sheet. Press each ball of dough with the back of a spoon to create a 1/4 to 1/2 inch thick cookie. Bake for 12 to 15 minutes. The cookies will firm up as they cool.
You can use roasted or raw macadamias when making cookies. Salted roasted nuts are considered the best option. You’ll need to add salt if you use unsalted nuts.

Dried fruit such as dried cherries and dried cranberries added to white chocolate macadamia nut cookies make a fantastic party table item or gift item during the holidays.
